This scrambled egg stuffed tomato is guaranteed to prevent breakfast boredom.  Low calorie, low carb and filling, it’s the perfect balance to start your day.   So simple and elegant.

INGREDIENTS:

•    1 tomato
•    1 egg
•    Parmesan cheese

INSTRUCTIONS:

Whip up the scrambled eggs, add the cheese, pour into the tomato and then bake at 425 degrees for about 25 minutes.  That’s it!  You can also add salt and pepper if you wish.
